Plot on the hills of Ome (Brescia). 400 meters above sea level.
50% Pinot Noir, 50% Chardonnay.
Pinot Noir is destemmed and put in a tank of cold maceration for a duration ranging from 6 to 8 hours at 5 ° C. The Chardonnay is softly pressed and the must is kept at 8 ° C. After racking both musts are fermented separately controlled temperature up to 18 ° C. In spring are then assembled for the next bottling.
The wine is aged in the bottle in contact with the lees for 24 months.
The dominant notes reminiscent of red berries.
Round and round. The presence of sugar is perfectly balanced by good acidity.
Suitable for sweets, but also as an aperitif for diners who do not like the products too dry.
