The Cuvée Prestige Rosé is made from the separate vinification of Pinot Noir and Chardonnay . The Pinot Noir grapes , once transported above the vat, are separated from the stalks and berries fall into them from above by gravity. The maceration "pink" is conducted for 24-36 hours : only a few hours to " seize the moment " , that is, to get that special and delicate shade of pink that distinguishes the Franciacorta Rosé in the bottle. As a result , the juice separated from the skins and fermented in small oak barrels in stainless steel tanks at controlled temperature. The Chardonnay grapes are vinified in the traditional manner, with the pressing of whole bunches . The best fractions of the must ferment in vats, separately. After 8 months of aging it is " magic ritual " of the creation of the cuvée , assembling wines based on Pinot Noir and Chardonnay . The blend thus obtained is bottled and aged on the lees in underground cellars at a constant temperature of 12 ° C for an average period of 30 months. Disgorgement occurs in the absence of oxygen, using a unique system , designed and patented by Ca ' del Bosco . This avoids shock and oxidative further additions of sulfites , making our Franciacorta purest , most enjoyable and most enduring . Finally, each bottle is packaged in uniquely marked to ensure traceability.
