Traditional know-how since 1584. For over four centuries, is implemented in order to perpetuate the know-how of a cottage industry in the development of our wines of Champagne. In 1584 Pierre Gosset, alderman of Ay and winemaker, produced wines, often red, with the harvest of its own vineyards. At the time, two wines vied place at the table of the kings of France: the wine of Ay, and a few hundred miles to the south, the wine of Beaune. Both were made from the same noble grape varieties: Black Pinot and Chardonnay. In the eighteenth century, the wines of Ay and the region became effervescent. Today the wines are presented in antique bottle, exact replica of the one used since the eighteenth century by Champagne Gosset. The malolactic fermentation is carefully avoided to preserve malic acid which restores the natural fruity aroma of wines.
