Freshness and fruitiness: The Royale Réserve sums up the style of the House Philipponnat, characterized by the soil of Ay and Mareuil-sur-Ay and his Pinot Blacks Premier and Grand Cru, which give it a nice fruitiness. With three years aging on its lees, the Royale Réserve takes a nice maturity while remaining refreshing, and this makes it an excellent aperitif wine. Its fruitiness allows him to perfectly accompany white meats, meats, poultry and fish.
Pure cuvée (first pressing) consists mostly of premier and grand cru. Pinot Noir majority (40-50%) comes primarily from our own vineyards in Ay and Mareuil, Chardonnay (30-35%) and Pinot Meunier (15-25%) from the best vineyards in the vicinity of Mareuil sur-Ay. The reserve wines (from 25% to 40% of the assembly), are managed in a solera and reassembled each year to incorporate old wines without loss of freshness.
Traditional, devoid of any premature oxidation. The majority of wines produced in vats complete their malolactic fermentation. For several years, some of the wines are fermented in small oak barrels for added complexity (these wines do not do their malolactic fermentation). The totality of reserve wines are vinified in barrels. Dosage Brut moderate (8 to 9 g / l) to maintain balance between freshness, fruitiness and fruitiness, and especially not to mask the character of the wine and its purity.
Ageing on lees in our cellars at a constant temperature of 12 ° C for each 3-year period, well above the statutory minimum term of 15 months. All wines remarried three months between decanting and shipping. Each bottle on the back label indicates: the date of decanting, dosing and lannata base.
Eye: Golden amber reflections, quite sustained thanks to the Pinot Noir. Foam end and rapid, persistent. Nose: At the beginning, the aroma of grape flowers, lime and fresh bread lightly toasted, then after aeration, red fruit, citrus and honey. Mouth: Bellattacco, winey, fruity (blackcurrant, raspberry, ripe grapes) and well built, broad and long, ending on a light note of biscuit and freshly baked bread.
Served cool but not ice cold (8 ° C), the Royale Réserve is a perfect aperitif. Its fruitiness will allow him also to accompany white meats, cold cuts and delicious hot preparations (pâtés crust) or cold, cold buffets, fish and seafood.
Very nice to be consumed at the end of a meal with a fruit, the Royale Réserve ages very well thanks to the quality of its assembly (similar to that of a wine vintage). It will keep its balance and its great for about 2 years, then will change favorably toward greater complexity and roundness during 5 years, in terms of an optimal cellar, cool and dark.
